Sunday Snack prepping: Morning Oatmeal Parfaits

When I was 13 years old I went on a 14 day canoe trip with ten other girls in southern Ontario, Lake of the Woods. One of the most empowering trips of my life to date. Of course, any food tasted amazing after 6 hours of paddling and waking up at dawn every morning, but oatmeal was my favourite! I believe it was my ultimate breakfast/snack of choice because of both the flavour and the memory of it being a staple morning meal in my house growing up. Still attached to those childhood kitchen-table memories, I find myself now as an adult, having moved away from home, in love with it again.

 

Welcome to my daily 10 am snack, everyday! I really like snacking when my students snack and this is a mess-free snack that I can easily prep once for the week!

 

Oatmeal is a naturally gluten-free whole grain that is full of vitamins, fiber, minerals and antioxidants. Iif that doesn’t interest you already, then get excited about all the amazing toppings you can put on it. You seriously can’t get bored!

Favourite way to make it...

2-3 cup servings

1 cup of old-fashioned rolled oats

1 cup of water

1 cup of almond milk (or soy, milk, coconut milk, etc)

Put all ingredients together and simmer covered for 3-5 minutes. If you want to make it creamier, replace the 1 cup of water with almond milk and continue stirring it until cooked.

Toppings: there is no wrong way you can do this, just put as much as you please!

High in omega-3 fatty acids, protein, fiber, zinc, iron:

Pumpkin seeds

Hemp hearts

Chia seeds

Coconut shavings*

Almonds

Cashews

Pecans

 

To sweeten it up:

Fresh fruit (ex. bananas, berries)

Cranberries*

Raisins*

Jam*

Yogurt*

Honey

Maple syrup

Agave syrup

*Be conscious of added processed sugar when buying these products

 

Final points:

Get creative with layering in your toppings

Store in a mason jar in the fridge and it should be fine for 3-4 days!

 

I usually make my oatmeal parfait on Sunday evening and spread out all my toppings. Then just get creative by making 5 different flavour combinations of oatmeal, one for everyday of the week! Voila!
